Shrove Tuesday and Pancake toppings

It’s Shrove Tuesday next week which also happens to fall in the middle of Fairtrade Fortnight. Which means, surely, fair trade pancakes and pancake toppings. Here’s a simple recipe and some fair trade topping ideas – find these in our shop in our extensive fair trade food range, or on our Click & Collect shop online – links below!

Pancake Recipe

  • Sift 100g plain flour and a pinch of salt into a bowl and make a well in the middle.
  • Break one medium free range egg and beat well with a wooden spoon, then gradually beat in 300ml milk to make a smooth batter.
  • Heat a little oil in the pan.
  • Pour in enough batter to thinly coat the base of the pan.
  • Cook for 2 minutes until golden brown, then turn or toss, and cook the other side until golden.
  • Transfer to a plate and repeat until all the batter is used up!

Yummy Fair Trade Pancake Toppings

  • Fair trade honey (delicious with banana slices and a sprinkling of cinnamon, or even with vanilla ice cream)
  • Rich dark chocolate spread (also edible straight out of the jar, forget the pancake!) with banana (fair trade, of course!)
  • Fair trade sugar and lemon
  • Fair trade jam, or even peanut butter and jam!
  • Fair trade dried fruit and dark chocolate: chop the dried fruit and grate or chop the dark chocolate. While still in the pan, sprinkle the chocolate over the pancake and allow it to melt just slightly. Remove from the pan, sprinkle with dried fruit then roll it up, dust the top with fair trade icing sugar.
  • Fair trade chocolate hazelnut spread
  • Caramelised almonds chopped up and sprinkled over fair trade vanilla ice cream
